Extract of Fermented Rice Bran with Shiitake Mushrooms
SHIITAKE mushrooms fermented in rice bran.
"LEF" is a fermented food extracted by applying a culture of shiitake mushrooms to pre-treated rice bran. It was developed in 2003 at our newly established factory.
The main components of rice bran are insoluble dietary fibers (polysaccharides) called cellulose and hemicellulose, which cannot be broken down by human digestive enzymes and are mostly excreted from the body. However, by applying the powerful enzymes produced by shiitake mushrooms to rice bran, we can obtain polysaccharides with enhanced functionality. This substance holds great potential for various applications in the future.

LEF is Strengths and Evidence
The characteristics of "LEF" include polysaccharides such as "hemicellulose," "β-glucan," and "α-glucan" as its main components, along with proteins and minerals.
Safety of LEF
LEF is made from "shiitake" and "rice bran," both of which have been used as food for a long time, ensuring its safety. Additionally, various safety tests, including toxicity tests and mutagenicity tests, have been conducted by analytical institutions, confirming its safety.
LEF Manufacturing Process
The enzymes from the mycelium of shiitake mushrooms are reacted with rice bran and extracted through a special treatment.
**Reaction** React the pre-treated rice bran with enzymes from shiitake mushroom.
**Decomposition** After the reaction is complete, ferment it.

Antianxiety Effects of LEF
Glass Ball Concealment Test
Mice instinctively feel fear towards glowing objects, and this fear is considered a model for human obsessive-compulsive disorder. We confirmed whether oral intake of LEF alleviates anxiety resembling obsessive-compulsive disorder. After preliminary breeding, the mice were evenly divided into three groups and fed different diets for 10 days.
As a result, both LEF and LLM significantly (p<0.05) increased the number of glass balls that were not concealed, thereby reducing anxiety.

Antitumor Effects of LEF
Antitumor Test – Mouse Lifespan Effect
We conducted tests to determine whether LEF has antitumor effects (lifespan extension). Mice (C57BL10 ♂) were divided into two groups: a control group and an LEF group (10 mice each). The control group was given regular feed, while the LEF group was given feed mixed with 0.9% LEF, allowing free intake. After one week, tumors (S1048B10) were implanted, and the mice were observed until they died from cancer.
